Get to know the Dolce di Rossano
Dolce di Rossano is an ancient olive cultivar native to Calabria, particularly the area
around Rossano in the province of Cosenza. Grown mainly along the Ionian coast, it
covers thousands of hectares and is one of the region’s most representative varieties.The
olives are small, with oil yields around 18–20%. Its extra virgin olive oil is especially valued
for both local tradition and modern high-quality monovarietal oils.
RECOMMENDATION
Its aromatic notes make this extra virgin olive oil a favorite ingredient for pasta dishes, white meats, fish,vegetables, and cheeses. It enriches the flavors of Mediterranean cuisine without overpowering them, but rather enhancing them with its balanced flavor and fruity, herbaceous notes.
Meet the Converso family
William Converso is the third generation of his family to cultivate olives in Rossano, Calabria, at the foot hills of the Sila mountains. Since the 1970s, he has carried on the work of his father and grandfather, combining traditional methods with modern innovation to ensure the highest quality.
The Converso family manages the entire process on their estate — harvesting olives, cold-pressing them within hours, and bottling on site. This careful approach produces an extra virgin olive oil with bright grassy aromas and a balanced, harmonious taste.
Today, William’s children, Emma and Giandomenico, support the family business, ensuring that the tradition, passion, and dedication to excellence continue into the next generation.
